I've been batch cookignt his week prepping for when the baby comes soon! So one recipe top on my list is a creole style Chicken Gumbo.
So what is a Gumbo?
A chicken gumbo is a traditional Louisiana Creole dish that typically consists of chicken, sausage, and vegetables cooked in a thick roux-based soup or stew. It is usually served over rice and is known for its rich, deep flavor and spicy kick.
The dish has a long history, with roots in the African, Native American, and French cultures that influenced the food of the Louisiana region. It is a popular dish throughout the Southern United States and has become a beloved comfort food for many.
Now we don't have a style of Gumbo in Mauritius BUT we do love stews, pots of gorgeous things cooking on the hob and OKRA. Which this has plenty of in it.
My version is much quicker than the traditional way of making it, I will tell you that now not to offend anyone!
CREOLE GUMBO
8 chicken thighs, skinned, bone in
1 pack of okra, top and tailed, sliced in small rounds
1 large onion, finely chopped
4 garlic cloves, chopped
3 celery stalks, finely chopped
1 tbsp cajun seasoning
1 tin plum tomatoes
240g chorizo, sliced or any smokey sausage
1 large green pepper, chopped
2 tbsp flour
2 tbsp vegetable oil
chicken stock
pepper, chillies or spring onions to garnish
Firstly add oil to a large pan, sear off the skinless chicken and sausage until lightly golden on both sides. Remove from the pan and set aside.
Ass a splash of oil if needed, tip in the onions, green pepper and celery. Cook well until softened while stirring. Then add the chopped garlic.
Add the cajun seasoning and mix well, tip in the chicken and sausage to combine with those spices. Sprinkle in the flour to thicken the gumbo.
Finally pour in the tomatoes, chicken stock until just under level with the chicken. Add the okra then simmer for 20-25 minutes until the chicken is tender.
Taste for seasoning and serve with rice and extra chillies.
