I hope you enjoy this recipe! If you have any questions or comments, please feel free to leave them below. I would love to hear from you!
Why do I roast my spices?
Roasting your spices before making the tandoori chicken marinade is key to unlocking their flavor. When you roast them, the spices release their essential oils, which gives the chicken a more robust flavor. I like to use a mixture of cumin, coriander, and garam masala for my tandoori chicken, but you can use any combination of spices that you like. Just make sure to roast them before adding them to the marinade.
What kind of yogurt should I use?
I prefer to use full-fat yogurt in this recipe, but you can use low-fat or non-fat yogurt if you prefer. The full-fat yogurt will give the chicken a richer flavor, but the low-fat or non-fat yogurt will work just fine.
Can I make this recipe ahead of time?
Yes! This is actually a great recipe to make ahead of time. Just prepare the marinade and coat the chicken in it, then refrigerate it. When you're ready to cook, simply preheat the oven and bake the chicken according to the recipe instructions.
How long will this recipe keep?
Leftover tandoori chicken will keep in the fridge for up to 3 days. Just make sure to store it in an airtight container. You can also freeze the chicken, and it will keep for up to 2 months. Thaw it overnight in the fridge before reheating.
